Shaw and Smith,Unoaked Chardonnay,2004Another wine from the Adelaide Hills, this time an unoaked Chardonnay which has more in common with Chablis than the big buttery oaky versions that led to the ' Anything but Chardonnay' catch-cry. Mainly cool temperatures during ripening, green harvesting and low yields ensured the winemakers had some good fruit to work with. Grapes were cool fermented in stainless steel without undergoing malolactic fermentation, then bottled early under srewcap to retain freshness and purity. The wine shows ripe crunchy Pink Lady apple fruit on the nose and palate with a hint of cashew nuts and lemon zest. There's lovely weight and freshness, with the ripe friut balanced by punchy acidity. This wine goes well with...Spicy Dishes |
