Domaine Valescure Chardonnay, Vin du Pays du Gard, 2006As with the Sauvignon, the Chardonnay grapes are harvested at night to maximise their freshness and preserve the acidity. This freshness is further enhanced by a cold fermentation. The wine is matured in stainless steel tanks for six months on the fine lees. Best drunk over the next 24 months. |

Vacqueyras 2005, Domaine de MontvacDelicious blend of Grenache (60%) and Syrah (30-35%)gives this wine its character enhanced by a small (5-10%) percentage of Mourvedre whose soft ripe tannins help the wine to mature gracefully. The three cepages are vinified together, initially at low temperature to ensure the capture of the varietal aromas and then at higher temperatures to extract the tannins and to achieve the rich complexity associated with the wines from this domaine. The wines mature elegantly for 2 to 4 years and in exceptional vintages can continue to develop complexity and finesse over 5 - 7 years. |
