Domaine Valescure Sauvignon, Vin du Pays du Gard, 2006100% Sauvignon Blanc harvested by hand at night when the cooler temperature produces better quality fruit in the wine. After fermentation, the wine is matured on the lees in tank for six months prior to bottling. Best drunk within 18 months |

Domaine Valescure Chardonnay, Vin du Pays du Gard, 2006As with the Sauvignon, the Chardonnay grapes are harvested at night to maximise their freshness and preserve the acidity. This freshness is further enhanced by a cold fermentation. The wine is matured in stainless steel tanks for six months on the fine lees. Best drunk over the next 24 months. |

Domaine Valescure Merlot, Vin du Pays du Gard, 2006100 % Merlot from vines grown on the chalky-clay soils typical of this valley. The grapes are de-stemmed after harvest and fermented in the same way as with the Cabernet Sauvignon. A proportion of the free run juice is blended with the press wine for the malo-lactic fermentation in barrel, giving the wine suppleness and complexity. Best drunk over the next 5 years. |

Domaine Valescure Cabernet Sauvignon, Vin du Pays du Gard, 2006The grapes are de-stemmed at harvest and following a short cold maceration of about 5 days at 8 degrees centigrade, the alcoholic fermentation commences at 22 degrees allowing for a slow extraction of colour and fruit. |

Domaine Valescure Rosé, Vin du Pays du Gard, 2006A blend of 80% Grenache and 20% Merlot that were fermented on their skins for 2 weeks, giving the wine its wonderful pale cherry colour. It was then matured on its lees for five months prior to bottling. Best drunk over the next 18 months. Recently awarded Gold Medal at the Concours Général Agricole wine show in Paris this year.
